As I become more of avid baker, I often think back to my beginning stages of baking or even cooking as a younger kid. Learning the go with the flow method and not by strict rules will help become a true baker. Mishaps come up, different ingredients come up, move to a new climate? Expect to see major changes. If we consistently strive to follow strict instructions instead of the beautiful art of bread, what are we even doing. Baking with love and intuition is the best choice and often tastes better.
